Wild catchThe Malpeque oyster branding is a staple of the Prince Edward Island oyster industry. These are the bread and butter or meat and potatoes of oysters on PEI. Malpeques are gathered from a variety of bays and rivers across PEI - including, but not limited to, Malpeque Bay. We offer Malpeques in Choice, Standard, and Commercial grades.
These oysters are harvested by a small group of dedicated public fishers. These fishers harvest using the traditional oyster tongs and search far and wide for our choice, standard, and commercial grade oysters. The public fishery is divided into a spring and fall season. The majority of these oysters will come from the spring fishing season. During the summer these same fishers also provide us with oysters from their own private leases. |

The Malpeque shells are highly variable. Colourings can be green, blonde, brown, black, or even white. The Malpeque meats are consistently full bodied. They are held on location until they are able to filter in the sweet and briny North Shore, PEI flavours during spring and summer. During the fall season we try to ship them out directly from their harvest location to showcase the flavour variations of each river or bay. |
